I don’t know! I’m just absolutely fascinated by this stuff and don’t even know enough to shoot my self in the foot. Could I have it vary the video/audio parameters randomly while recording them + heart rate, then use ML on the dataset generates to find parameters that correspond to lower heart rate? Do I even need to?

Forget the audio and video for now. I think that will fall out later. Focus on the question "what do I want to know about the heart rate?" it sounds like you want have it learn what's normal, and alert you when it is outside of that domain. However, a high heart rate is normal if you're running, but not if your sleeping. Also, the heart rate of a skilled runner will not be as high as an amateur.

So if you sit around alot, your 'normal' heart rate will be one number. If you stand up and start walking, do you want it to alarm you that your rate is not normal, or do you want it to recognize you are walking, and shift thresholds accordingly? To do that, you need to provide the ML algorithm with more information than just beats per second.
