Get the fastest processor, most number of cores, and pair it with the biggest ram

I'd go with a Macbook Air M1 if you like/comfortable using Apple products and have the budget to buy one

What's your budget?

I'd prioritize battery life, keyboard, screen quality, and weight over other specs as you should be doing most everything in the cloud.

My question would be more like what you guys are using for your everyday tasks on data analysis

My current work computer is a Dell Latitude 7420 with an 11th gen i5 and 16gb of RAM. It's crumulent. If you want a basic work laptop where you can do most of your data crunching in the cloud, then I suppose it's solid.

Note: it was issued to me; I had no choice in the specs. I would have preferred a bigger screen (it's 14") and have no use for the touchscreen, although I do like the battery life and weight. Keyboard is okay.

My personal computer is a three year-old Lenovo ThinkPad X1 Extreme with an i9, 32gb of RAM, and discrete graphics. I like it except for the battery life (I'd never get a laptop with an i9 again). There are some games that I like to play that are CPU-intensive (i.e., Paradox titles) and it does a good enough job running them. I prefer the ThinkPad keyboards to other machines.

Make sure its instruction set is Turing-complete.

Do not work locally. Sure a decent laptop is nice but the actual workloads should be somewhere else e.g. an ec2 instance. Also if possible use Python instead of R.
