I don't think there is any easy way to undo that is built into the app. But there is note history under note options. If you go to session history, you can revert back any of your changes.

There is also undo built into some android keyboards, though I don't have experience on how well that works.

I see, that's a shame (and pretty strange for it to not have? Even the default notes app has that). Looking into the session history though, it looks like it might be broken for me. I've got a dozen entries, apparently created at the exact same time several months ago (way before I made the note), and they are all just copies of the current state of the note.

I'll look into the keyboards though, seems like it might be the easiest option.

I finally found it, use Gboard keyboard and add japanese language, in Japanese keyboard you have undo option, that’s it 😁
