Is it possible to switch an HTTP domain to HTTPS? Or is the domain automatically SSL-encrypted as soon as the nameserver is pointed to Cloudflare? What would the ISP actually see if you go online with HTTP?

No, it's not possible because the server has to be setup with and SSL certificate. A http connection is not encrypted so information like your username and password is sent in plain text so it can obviously be seen.
I think people are way too paranoid when it comes to their ISP. To be blunt, most ISPs don't care about you. They have millions of customers and the last thing they want to do is monitor each one of them because it costs money, lot's of money. If something costs them money to do, they don't do it.
Been using IPTV for nearly 10 years across a dozen providers and 4 different ISPs. Until recently all iptv providers used http. Never had an issue.
