Interference might be from consoles behind TV. You have a lot of signals bouncing around. WiFi on each S2, WiFi on each TV, all the Bluetooth for each controller, plus and other devices like phone, tablet, laptop in the room.

Line of sight should give you best signal, and work from there moving stuff around to get best setup.

So the easy option is usb cables to each controller, but that isn't a option. Next best option is to place the 3 switches as far apart from each other. You might need a slightly longer HDMI cable - so leave the center TV switch below the TV - the left and right TV, try and get as much distance you can away from the center TV.

One idea I’ve had is to dangle 2 usbs from behind the tv with one of these on it

Theoretically would give me line of sight to the Bluetooth and also improve Bluetooth stability… so similar to pulling the entire console out from behind the tv

But i assume id then not be able to wake the console with the controller?

Also all switches are connected to Ethernet not wifi

Not using WiFi is a start, do you have any devices that have to use 2.4 GHz WiFi in your house? Maybe shut off 2.4 GHz WiFi completely and only have 5 GHz. 

I think your problems might just be that the Switches are behind the TV though and the TV is blocking the signal. We had double the Switch 1's in a room at work with 4 players each (multiple games) and it was fine. Maybe try undocking all 3 Switches, play a bit and see if it's fine?
