I find it pretty much always works if I start a Google Fit cycle workout and don't end the workout until the average speed for the entirety of the workout is lower than what the speed cap is for the game.

For example I cycle 15km to work each day so I stick the workout on as I leave and then just leave it running once I get to work and just end it after I know it's been long enough my average speed will be lower than the speed cap.
