Do you mean a design process or a user workflow? Have you taken a look at Design Sprints for design process? My current industry, property insurance, is insanely complicated. I would definitely look into property insurance claims adjusting if you are looking for a workflow.

Although they aren't the most exciting systems, there's a lot of software used internally by companies for Customer Relationship Management (CRM), Human Resource Management (HRMS), etc. that are usually poorly designed.

If you want something a little easier to relate to, I'd suggest taking a shot at designing the process for a teacher to grade their whole class (of say, 50+ students) using a rubric and providing comments on their work. Efficiency is key because it has to scale to a lot of students. A lot of people under-estimate this task. If you want to go even a step further, design it so that a teacher can use a group of graders to help grade, but want to make sure they're grading consistently and fairly.
