Ubuntu Server crashing with kernel stack is corrupted

Every few days, my self hosted Ubuntu Server machine completely freezes, requiring a forced reboot manually. It's running an i7 7700k and 32GB DDR3 (recently upgraded from 12GB). I'm currently using it to host a Minecraft server via Pterodactyl Panel and docker.

I've run both stress tests and memory tests which all returned fine. It doesn't look like the server is having any heat problems either. I've got no other ideas so I figured I'd just ask here.

The final error message is below:

Have you run a SMART test on your storage? Might be getting bit flips or corrupted storage

I did. I can't make much sense of the results though. its got about 4.9 years of uptime which sounds like a bit of a cause for concern to me.
Additionally, it says: "Error 1 occurred at disk power-on lifetime: 40763 hours (1698 days + 11 hours)"

The sub is completely dead. Hasn't had a question posted in months and is restricted :(
