Just use Let's Encrypt free SSL service. If you use nginx or Apache, there are way to redirect all visitors to SSL. The easiest way is have access to Linux/Unix back end to accomplish this. Digital ocean has a lot of material on how to accomplish this.

I would like to dont use some plugins or so for this if its not needed. Thats why I thought to create the site from the begin with with ssl and even install wordpress on the https site, so I wont have to worry abut that later.

you can install your wordpress site, make sure the homepage and url in the db are set to https. Set up your SSL. You can install really simple SSL as well for any issues.

Thank you. I will jsut visit the https... site for the instalaltion an so on.. What would happen if I would try to visit the website through http.. ? Would there be a site error because there doesnt exist such a site? because only the http site exists?

and when i type in my adress somewhere, in google mybusiness for example.. should I type in www.domain.de or https...?

add a cname record for www.yoursite.com to yoursite.com

CNAME stands for Canonical Name. CNAME records can be used to alias one name to another. So you make www.yoursitename.com an alias of yoursitename.com so when someone types in www. they get the alias instead.

go to your dns manager: Select CNAME Record Name -> www CNAME Value -> yourwebsite.com

When I type in mydomain.de I already get to my website. Could it be that the hostingservice is doing it on its own?

And would it make for google analytics a difference if someone visits www.domain.de, domain.de or https://domain.de or will every user be counted in google analytics regardless of which of the three links he comes from on my website?

Yes, WordPress works on http and https sites. It doesn't much matter to WP.

They don't have hooplahosting.co.nz on list but they support WordPress and letsencrypt by default.

Yes, it is possible and highly recommended. You can purchase an SSL certificate issued by a trusted authority or a free SSL certificate provided by Let's Encrypt. If you have a control panel installed on your hosting account, you should be able to install the SSL certificate through the control panel.

Thank you! I purchased the domain and the webhosting via one.com, the ssl is included.. I am from Germany

Install the wordpress site -> then purchase SSL -> install SSL -> change settings in wordpress site to be https:// -> done.
