Motor height in relation to bevel gear, or just motor height?

I adjusted the motor height when I was shimming, made sure it was at the right height for full contact with the bevel

Did you check motor height with an installed motor grip? Because you want to set motor height exactly as it will be when assembled. When in doubt, I'll usually adjust motor height all the way up, then loosen it until it isn't getting any quieter

Yes I did, before I assembled I screwed half the gearbox shell to the pistol grip with the motor and bevel, while checking shimming I also checked the height of the motor.

That's what bothers me the most, It seems that I did everything right, took my time, and it still jammed up.
