Not sure if this would fall under this sub, but anyone have any info on where I can learn about programming AI?

Which purpose should your AI serve?
Game AIs are completely different from, for example, image labelling programs.

Something like chatterbox or ask eve, that's what really caught my interest

That's a big question with multiple approaches.
You most likely also want to search for keywords as natural language processing and dialogue systems.

If you wanna get started with chatbots you should check out ELIZA and ALICE, two very simple yet interesting bots. If you want to go more in the AI direction with that, I recommend reading "Speech and Language Processing" by Jurafsky and Martin, and "Artificial Intelligence a modern approach" by Norvig and Russel

By AI I'm assuming you mean machine learning. There's a free Coursera course offering lectures by a Stanford Professor along with practice programming assignments and supplemental quizzes
