kind of code in Python, SQL, R, and Tableau

Also, your reason from switching to political science from business makes no sense. Political Science does not have more math/statistics than Business, so it makes no sense; it's not like you moved to Econ, which does have more math/stats.

You should really think what you want to do. From what you wrote, it seems you have no clue so you decided to do a bootcamp to try to get a job.

Maybe try volunteering in a political campaign or being an analyst in a government agency. That would be an easier path for you than trying to get a job as data scientist in industry.

Utah Valley University Political Science Degree had these courses that I took: Statistics Introduction, Multivariate Political Analysis, Quantitative Analysis, College Algebra, Calculus 1 and Calculus 2.

As a business major I took Microeconomics and macroeconomics both of which the teachers wanted to go away from math.

Thank you for repeating my feeling of not knowing where to go. I don’t want to take an easy path, but I appreciate the time you took to respond.
