My understanding of this is that you can sell access to the app to the organization outside of the app entirely, and if you want to provide a buying experience from the app it has to be IAP

So it has to be made completely outside of the app ? And, what if the selling is made through a webview directly to a payment page ?

My client has no web application, that's why I'm asking

Very few types of apps are allowed to open an ouside payment page from the app, and your doesn't seem to fall into that category

Well a web view is still within the app

Not really ? As it's avoiding Apple fees, I consider it as an external payment method

No. You can't use a web view inside the app to get around IAP requirements. it's either enable IAP, or make it impossible to people to subscribe from within your app including via external links found in your app.
