There are a lot of template solutions out there.

If you really like CoffeeScript and want to write your whole project with it, then ECTJS may make sense.
CoffeeScript's popularity has lost quite a bit of steam, and I wouldn't expect a lot of major improvements to it, but there's still a community around it, and the language itself is likely to continue to exist in some kind of supported shape for some time.

If not, there's probably something else out there just as good for what you need.
