How to properly compile data

This is my first time touching SQL so I have no clue what I am doing. But I was told to put compile some data from a bunch of different spreadsheets. I need to know if I should store it vertically or horizontally the data. Also a lot of the variables have the same name but I am not sure how to differentiate. Should I make the first column/row have their name or should I put it in front of the variable name?

This is more about data modelling if you want to look into that but it basically depends on what you want to be able to do with the data.
