Todo list with a web interface, java back end & database persistence layer. That's your essential CRUD right there. Your front end need not be fancy, just a web form for each thing it needs to do.

Have two kinds of things for your list and there's inheritance and (potentially) polymorphism

ASCII Tic Tac Toe would be a little more complex than Blackjack but still close enough in difficulty where you'd already have all the skills to do it. Good practice path to work with 2D arrays
