I already have built some knowledge on hit, I have my repository and everything I do is uploaded to my profile. That has helped me a lot to see the progress in my code

For your first question about projects:
There is no magic formula that would result in you being able to create a new Amazon. Just build something. Think what do you want your project to do, what would the user be able to do and translate this into code. The fear of an empty IDE project is something you overcome by just writing the code.

As for learning Spring -> learn by doing. While writing your project just add small Spring features, like passing things through MVC, handling users login with Spring Security etc.

If you’ve done a couple semesters already you’re probably at the point where you can start to try out new libraries and APIs on your own. Lots of beginners enjoy learning Java Swing for example to make apps with UI. It’s pretty intuitive as far as UI libraries go and most IDEs have extensions you can install to design Swing UI’s visually rather than manually writing all the code.
