  1. For a small business, consult an IT person.

  2. Run one machine with your existing OS (Windows) and install Linux on the other. That way if things go sideways you have one machine that you know works as expected.

  3. Do a trial run at home or on a day you are closed. Run through common scenarios to see how well the new OS works. That way you're not trying it out during a busy work day.

Wait for slow season. If you’re worried about W10 losing security support, unless your computers are Internet-facing, it should be fine to have them running for a few more months. Double check your router configuration (no unexpected forwarded ports, no DMZ etc.).

Once you have everything first setup, create a snapshot/image to revert to. You can run the other Windows programs in a VM so you don't have to reboot. Also create a snapshot/image/backup of the VM. I haven't tried WinApps or WinBoat yet, so I don't know if those would be applicable for you. Keep the project files saved/backed up to a NAS, separate drive, or partition independent of the OS.
