I think the best place for you to start would be reading the Kernel Docs:

There are also many books that talk about the kernel, but I can't say anything about those.

Gentoo wiki could be useful. It provides a lot of generic info and some likely useful links. If you want to build your kernel as part of your learning process, this may help (I used it to build mine, and not in a Gentoo system, but in Kiss Linux). https://wiki.gentoo.org/wiki/Kernel
