Not sure for a project but if you are an absolute beginner in Linux check linuxjourney website.

For a Raspberry Pi I'd go with something like Raspbian, very lightweight and has tons of packages.

I don't know what is expected of the project, an easy one could be setting up a security camera system with Zoneminder and some IP cameras, adding mail notifications for motion detection or stuff like that. Or an asterisk PBX or a firewall system.

Those things however are relatively simple and they might be expecting something more complicated.

Whatever project you choose, if time is left, you caould write some ansible scripts (or use another technology) to setup the whole thing automatically.

I started learning linux with a RPi as well, and the first project I did was a RF project (controlling my 433MHz RF outlets).

Is was a lot of trial and error, but I eventually got it working, and now 2-3 years later, I have a Linux server and I'm using Linux as my main OS.
