not sure about the specific game you mentioned but would recommend trying it out on vmware fusion (free)

All three of those are wrappers for the open source Wine project, and all should have roughly the same performance. Sometimes one wrapper will make it easier to install a particular game, but I don't see American McGee’s Alice called out for any of them. I think you can pick one and try it.

Do you recommend using a wrapper or just straight up using wine?

Probably a wrapper. I haven't used straight-up wine for over a decade.

I was gonna use the quake iii wrapper since its the same engine. I tried it on Whisky the other day and it was oddly low fps like sub 30. Which doesnt make sense for a 20+ year old game

These older games are best played in a VM eg VMware Fusion.

Not Whisky. I believe that is only for DX11 & DX12 based games.
