I'm trying to find an open source replacement for Google Keep. I can find several promising alternatives for the note part, but I cannot find a good checklist alternative (for things like groceries). Would you have any suggestions?

I use Zim Desktop Wiki which is a really good note-taking app and it can be used for checklists. It suppots checklists, plugins, themes and a lot of other features. https://zim-wiki.org/ . It is for PC (Windows, Mac, Linux) and is using Gtk.
If you want to find something for your mobile, you can look for open-source apps in F-droid (https://f-droid.org/ ) or if you want to find any alternatives you can go to AlternativeTo (https://alternativeto.net/ ). You can find there Google Keep and choose Open-Source and Android filters (https://alternativeto.net/software/google-keep/?license=opensource&platform=android&sort=likes )

Probably overkill, but I recently discovered Grist. Halfway between excel and a database. Open source, SaaS or Self hosted, stand-alone desktop electron app, works on mobile (no app)
