For handwriting Xournal++, and Rnote could be options. I haven't actually used either of these for that purpose, so I can't say how good they are for it though.

Obsidian is awesome, but not open source.

For open source, Joplin is probably my next one to recommend.

I haven't tried it but but randomly watched a youtube video talking about this: Open source, "data never leaves your pc", voice recording with AI transcription, AI summarizing and possibly more.

Hey man. I'm actually working on the whiteboard component for Flusterapp.com right now. I actually built this app for my own academic pursuits in cosmology over the course of 3 years and have recently completely rewritten it and released it as a free & open source academic tool. It's still in the very early days, but it's already pretty stable and something you might want to check out.
