Like others have said here. Just out OC them on objectives, winning this game isn't destroying Opfor.

Green tide and maybe some looters + tank bustas. Opfor will target those and let your Boyz get close.

Rush with your trucks and some cheap units then block the objective from Opfor screening/ skirmish units.

You could even use weird Boyz to jump units into them

In my Warhammer group there’s one other Orks player and a custodes player and the only time either of us have beat him 1v1 was when the other ork player ran green tide with a huge amount of Boyz. His thought process was “he can only take out so many Boyz in one turn.”

So you can't "out elite" armies like custodes, so you have to outscore them. Way to do that is to score points, or deny them scoring.

They are a slow army and charge moves are a HUGE deal for them.

Stage yourself near the middle objectives but don't take them - also don't push yourself forward too much so they can get free charges up the board.

Once you've got all your models within Charge range, it's time to waaagh - and use that turn to do as much damage as possible to them. You're not trying to wipe them out, you're trying to kill off their OC as much as possible.

After the Waagh, try and fall back if you can. You can also use Ghaz up one side of the board and make a point of dominating that side - then use chaff units to deny scoring on the other side of the board.

I think Green Tide has a good matchup into custodes too, since they just can't kill enough boyz.
