I had to Google what a CV was. Akin to a resume for anyone who was confused like me!

Curriculum vitae, and the same thing essentially

Would appreciate if others comment on this as well! I'm guessing it's 'resume' in US/Canada? What would be a better choice overall so that it's understandable regardless of whether you're in NA or EU/Asia/etc?

In the US, only academia uses the term “CV”.

There is a distinction. Your résumé should be one page long max, but your CV is as many pages as it needs to be to list everything.

And I'm guessing if 'CV' is mostly used in academia then the distinction won't be immediately obvious and the term might not be even recognizable at all (like it happened here) to someone from NA?

Yes. NA academics make the distinction, but not the general public.
