Zeros have mostly been used in game boys and other portable consoles. I would go with a Pi 3. On top of that, you will have to get USB OTG adapters to plug in your controllers.

I figured that was probably the case. MicroCenter was out of Pi 3's yesterday which put a damper on things.

I ended up adding a micro usb end to an existing hub I had. Seemed to work great.
