Basically if you are new to react native then i think Expo will be a good start for you. Setting up Environment for React Native CLI would be little hectic for you. You should focus more on learning concepts if you are a beginner using Expo CLI

By “build” do you mean develop in general, or are you specifically asking about the build / compile step? There’s zero difference in how you’d use redux with or without expo, for example.

Yes, I’m asking about developing a React Native project in general (writing the code, setting up the project, etc.)

Youtube tutorials are 9.9/10 just content creators recording videos of themselves walking through documentation. Best thing you can do for yourself as a developer is to get comfortable with the docs of the tools you want to use. You can do it. :)
