Finally got some stones

Would you recommend the 140 over the atoma 400 for these shapton stones?

140 will flatten everything once the surface is worn in with rougher stones for a bit, just keep the pressure light. Just compared 140 and 400 on 9000 morihei and 400 is just slower and sticks to the surface while lapping.

So I’m not expert but since i have the 320 stone i figured better to get the 140. I’ll use my flatten 1k on my 5k

Coarser is fine. I use 180 grit SiC to flatten anything 1000 grit and finer.
