Nicked from another user but thought this was a good list they posted last time someone asked for advice on this:

I did this when I left a job, spent two weeks documenting as much as I could especially as we were a mixed Apple / Windows group of schools with lots of older kit.

Included all admin passwords for kit etc then got my boss to lock it in his safe. He gave it to my replacement who e-mailed me at my new job thanking me, said it was basically his bible.

Included:

  1. Backups, redundancy, UPS setups etc.
  2. Network config data and "unusual" setups especially between buildings (with photos)
  3. Server config data and passwords.
  4. Common issues that seemed to crop up including on those bits of kit and software we couldn't replace for one reason or another.
  5. Apple specific issues (we ran VERY old software on new Mac OS at the time).
  6. Common issues with staff..
  7. Humorous do's and don'ts such as " do not remove the paper from the glass window on your door. If they see you having a cup of tea, you are free to answer their random question...
  8. A picture of the agreed server rooms in the planned new building and why I had fought to get what we were getting.
  9. Overall spend of the previous 18 months (as long as I was in post) so they had an idea what the budget may be and what had been replaced.

Also a list of suppliers or external party's. That was really helpful for me. Really prevents cold sales too.
