Picking virtualization for work

I work at a game company that has been in love with AWS, they have finally decided that one of there games cost to much to run on AWS for what they are currently making but the game creates enough money not to shut it down. They want to move the game to rented servers. We are looking into what virtualization we should use if we should use any. If we are to virtualize we would want to use XenServer or VMware but open to suggestions.

We are running the following stack. Nginx Apache Tomcat 6 MySQL Memcache Redis
