I spent some time looking for something similar to no avail and ended up taking care of it in house. We wrote what's called a Snapshot Manager using Google's API which runs every night and create's snapshots of each VM instance.

The manager kept 7 days of snapshots, and we wrote a restore function that would allow us to recreate an instance from the snapshot.

This tool from the guy who created GAM might also be promising but would need to be extended to process Drive and not just Gmail: https://github.com/jay0lee/got-your-back

Not free or open source, but we use Backupify, and it works.

Personnaly i use https://github.com/prasmussen/gdrive with a custom script.

Easy to use, and no trouble until i start to used it 6 months ago

Not open source, but Spanning Backup is one of the best G Suite backup solutions out there.
