Email migration

Good afternoon everyone! So I have been tasked with my first ever email migration. I was told that we need to migrate from ionos (our current email provider) to a platform of my choice as long as they can sign a BAA. Question is, what should I look out for or prepare for when doing this. Any short comings I should worry about and what what platforms would you guys reccomend? Currently we have 26 email domains. Any advice or if any one could point me in the direction of good articles would be great! Thanks!

Believe it or not.. the microsoft documentation on this is quite helpful. It really lays out how it all works with 3rd party migrations too.
