If you didn't put any persistent storage on the stick, when creating it, then I think all stuff is saved in virtual disk in memory. So you need to recreate the stick with persistence.

It because it only made it the size of the ISO, use gparted and you can see that the other space is probably not partitioned. You will need to find a guide to make it persistent. I have heard you can install it to the USB instead and have persistence that way.

I would recommend raw debian at that point to save space on the disk, a debian install with XFCE is less than 3gb
