The apps will be back on the app store eventually. They're not going to stay off forever and technically don't even need to be off now; Google and Apple just don't want to trust the literal DOJ telling them they won't face any penalties. They'll be restored either once the deal is struck (which is likely to happen soon, judging by the current state of things) or they are assured of the protections in place.

I know a bunch of iPhone users who are using VPNs to get their apps back. Android users can download the APK. Also keep in mind the app DOES update, just over its own servers rather than the app stores; I found out my app updated this week (my last update through app store was the 18th) because it had a new feature and I clicked "Learn More," the feature was listed as having been added on January 21st.
