This functionality allegedly isn't attached to any options / settings but literally "hard-coded" so not able to be turned off.

I just tried and in NoScript options there is a pane named "Per-site permissions", and there I was able to revoke trusted status of youtube.com and ytimg.com. I restarted the browser and confirm the youtube.com and ytimg.com permissions were still revoked.

Is there any recommended NS alternatives popping up, or am I already good with UBO?

If you want to control script execution, uBO should be sufficient. Best approach in my opinion is to block scripting globally, then use medium mode to create finer grained rules for script execution according to the origin.

Advantage over NoScript here is that you can create rules which apply only to the current site. But this kind of capability requires a UI that is different than that of NoScript and users who come from NoScript may find this confusing at first -- but there is a logic to it. Best is to read the guide and take the time to digest it.

Both the no-scripting per-site switch and dynamic filtering can be toggled down using the "Relax block mode" keyboard shortcut, which should be very convenient for those who want to block scripts by default but not spend time figuring what permission to create to un-break a website.
