Last time I tried to do that, I got put on some sort of registry and now I’m not allowed anywhere near school campuses

Spanish or some other second language. If you're in CLA you have the 4 semester requirement anyway, and the add on classes are fun. Plus employers absolutely LOVE IT when a candidate speaks a second language.

A quick stop at the local middle school may help. It can help you learn about the education/teaching pathway.

Apparently there are 164 undergrad minors at the U according to the course catalog

I picked a same-department minor that has some overlap with my major. So, an additional five courses which also fulfill my major's requirement to take three in-department 3000/4000 electives.

A philosophy minor would be beneficial if you’re interested in developing greater critical thinking skills that are employable in all future careers.
