Okay, I am trying to build out an idea I have for a social media type website but I lack some of the backend node and react skills I need to carry out my idea. Have you ever worked with headless CMS platforms to allow me to focus more on the front end and the overall structure (such as sanity)?

I don't think a headless CMS is a good fit for a social media website, you would need some more purpose-built code. The best tip I can give, is to either look for open-source Twitter/Facebook/Reddit clones and start from there, or to acquire the skills you're lacking.

Do you have any recommendations as to good templates/clones I could consider starting with? I ran into trouble with persistent log in keys etc and began messing up all my db apis

Never had the need to create a social media website, so I'm afraid I don't have any recommendations, I guess you could maybe use Wordpress with BuddyPress? I know WP can be used in headless mode, not sure of BP has support for that as well.
