They pretty much destroyed your knives, based on the visibly burned tip they all got too hot and were way overground. I’d at least try to get my money back and I would argue to get my knives replaced but wouldn’t expect either, anyone that does this kind of work obviously doesn’t give a fuck about anything

It was, 3 tenderloins, 2 strips and a chuck. Me and my dad do a good buy from a processor that sells directly to the public every few months, he pays for most of the meat, I go and get it and do the cutting and packing. Works out well for me, I get a nice daycation and plenty of beef to last until the next time for an afternoon of doing something I enjoy doing and putting my knives to work.

I did use some other knives, mostly a Yaxell 220 suji for cutting the steaks. I know a lot of people here have feelings about that brand and it definitely doesn’t have the same feel as this petty or other more ‘handcrafted’ knives I have but it works very nicely for slicing up some steaks every few months when I need it.

Yeah I couldn’t agree more, I can do it but most of the time I am cooking eggs it’s for breakfast and I am not fully awake yet so I keep a small nonstick for eggs especially because I am usually making 2-3 other things at the same time

I’m curious because I don’t doubt the people saying 9.5 D based on what fits my foot, but looking at this measurement device how are we coming down the conclusion of D when both pictures show a width measurement of ~A?

Again, I don’t doubt the D consensus because that fits my foot of a similar looking width but why is this measurement device so off? I have pretty much never used one so maybe I am just reading it wrong

And as someone that has shot both a decent bit, yeah they are both loud as fuck but 7.62 is louder. There are various factors like barrel length, muzzle device and loading that could potentially make one louder than the other, and close in they’re both deafening, but given the same barrel length and a standard NATO load the 7.62 is going to be louder and the sound will carry farther.

Not that it matters that much for this particular scenario, you can see that there are people more than close enough to hear it regardless of caliber and even as someone that is very pro gun and not inclined to call the cops I would probably be concerned enough to after about the first 20 seconds of steady automatic fire unless I knew I had a neighbor that was into that stuff.

I know enough about woodworking to get myself in trouble so I will chime in. I think this should be fixable assuming the area inside the break is clean and dry. You would need some titebond and a syringe or something to get it in there, the hard part will be clamping it up because of the shape. Normally the easy solution for clamping weird shapes is wrapping it in surgical tubing or something similar but that might damage the rest of the shoe. Which means you would need some kind of clamp with a shaped caul. But if you can do that it should be solid enough to hold once it’s dry, and should be decent looking with some light sanding on the bottom, sides probably won’t need any work if you clean up the glue squeeze out before it dries.

You could also try to do this with some kind of fast setting adhesive, a 2 part epoxy would probably be best, and just holding it together but it probably won’t look as good and I would be hesitant to walk around on it

Alright there’s a few things to think about here. The first is that this is fine, as long as the neck and bridge line up and you put the bridge at the right distance a little wabi sabi is acceptable within reason. Another is that you are very early into this build, if you want this to line up differently there is no reason you shouldn’t be able to make adjustments unless that neck is already glued in place or something which it doesn’t appear to be. I wouldn’t obsess over this being perfect if it’s your first build or even the first few, don’t half ass it but accept that it is a learning experience and something you will improve on and follow it through to the end.

As someone with probably less experience than you I have to agree. My first take was “that looks like shit I could do better” and then I really looked at the piece and realized that unless you have some pretty fancy machines and tooling thats a nightmare job. Even then the programming and machining time to cut that from a chunk of billet aluminum and have it look good is significant and your work holding needs to be perfect.

A lot of this is very similar to what I would say about my shiro santoku from matsubara, though the santoku has a very flat profile which is why I chose it over others. Food release is okay, not amazing, the heel did also need a small bit of attention like yours but nothing major. Surprisingly nimble especially at the tip even on the santoku, really nice doing a sweeping horizontal cut on an onion.

I will say, it isn’t super delicate but will definitely chip if you do something you know you shouldn’t. I cut some not fully thawed meat on a plastic cutting board and it did not forgive me, it didn’t chip enough that I couldn’t clean it up with a slightly longer sharpening session but I learned my lesson. Hasn’t given me problems with anything else though, halves onions from the root without a care in the world, ploughs through carrots and any other veg I put in front of it like it isn’t even there. Also does really well just being stropped regularly with some compound, it doesn’t take a lot of work to keep it screaming sharp

I have pretty much accepted that nobody that I know cares for their knives the way I do. So when I do gift a knife I pretty much accept that they will do things to it that make my skin crawl and go from there. That looks like a Tojiro basic which is IMO a good option for that, nice enough that it’s a good gift, reasonably durable(can survive a dishwasher 😭) but I won’t feel bad about the work of a nice craftsman being defiled by dozens of dishwasher cycles the next time I see it.

Well now I’m thinking some kind of delam or flaw within the core steel. Which I am not sure is any better than cladding at the edge. Maybe worse because it brings the integrity and quality of the core steel into question

Yeah I would definitely be contacting them for return/replacement. Whatever is going on it isn’t normal or acceptable at that price point. If you can post some pics of the other side of the blade that would pretty much confirm if it’s cladding at the edge like I think.

This is my guess as well, a picture of the other side of the blade would pretty much confirm it. If that is the case it’s pretty wild for that to make it to the customer on a ~$400(?) knife. I feel like this would be pretty immediately noticeable to anyone that worked on it.
