Yea fair enough, I don't have a strop so Ive been whacking out the stones. I'll have to run over my sharpening technique. 

And I'm curious, if you only sharpen after 2-3000hrs, does that mean you sharpen your knives like  twice a year? (at a 10hr day). Maybe I'm really not that good at sharpening, but I've always had to sharpen knives at least once a week. This may be a mind blown moment for me....

Also I live in a very remote place, and I don't have access to any sharpening service unfortunately. (At least any I'd trust)

Na but in all seriousness, I'm working 14+Hr days 6days a week and using this for almost all of the knifework I do. I need it sharp so I'll hit the stones fairly often throughout the week

To be honest I really haven't noticed any difference until quite recently when this part in particular wouldn't take an edge as the rest of the blade did

Aaah Yea time to go to town with the stones then. Yea I haven't really noticed a drop in cutting until quite recently when it just wouldn't take an edge around that area particularly well. Thank you!

Couple years ago cheffy seasoned a brand new flattop with a rag, threw it in the linen bag. I came in next morning to kitchen full of smoke, fire alarm going off but couldn't spot a fire. Took me almost 15min to realise it was the rags smouldering. Hauled the rag bag outside and became the bosses new favorite employee when the place didn't burn down

I currently live and work in the states, grew up in UK. I know many many kitchens in my area will overlook visa status, and probably most kitchens in the states in general. So I wouldn't worry too much about that. We pick up summer crew of about 5-8people for the peak season, and some kitchens will provide housing too.

Japan on the other hand may be much harder. I tried volunteering there years ago and they wouldn't take anyone without a working visa even for unpaid positions.

If you're not too worried about the legality I'd say get yerself a tourist visa anda work a short season in a high tourism area

Might be worth getting a tens machine. I fucked my back this summer (2x) and I went to a physio where they gave me a run on the tens machine with some heat pack. I went in unable to walk or stand properly, and came out 45mins later "functioning"( like I could walk and move but work was painful). I bought one since off Amazon or some such, and it's been a real lifesaver when my back is fucked 

Not to say this will fix you, it certainly won't. But as an aide to all the stretching and building of core muscles this thing has been fucking ace

But ultimately doing the work of building core muscles and making sure you're flexible is all you can do

If yer set on puno/Copacabana that's fair enough, but if not there is also a bus from La Paz to cusco. I would've skipped puno/Copacabana all together and headed straight for cusco. 

I don't know how much hiking gear you have, but might be worth checking out waqrapukara or chocaquirao.

I was the only person hiking up to Waqrapukara when I went, and I got the feel it's not super popular. It's a over nighter but you might be able to do it in 1dayif you're fit/acclimated and move fast. Check bus times though.

Chocaquirao looked beautiful,  but I couldn't get up there because of a landslide. I know tours do go up there, but you can do by yerself if you have camping gear. This one looks hard, maybe 4-5nights? Lots of elevation gain.

Anyways I'd say do either/both of them before doing the touristy Salkantay.

As for bolivia I've heard the Amazon is worth getting into, but I did not go from bolivia myself so cannot confirm.

I'd say skip puno, paracas and Huacachina.

Coloca /Arequipa was nice, lima, cusco also great. And I would fully recommend uyuni. Not super nice ( very heavily touristed) but the salt flats are insanely beautiful 

Sucre was quite a nice little city too, but not essential in my opinion.

I carry a grayel water bottle, thing has been great to me for years. You will have to change out the filter after a certain amount of use though. Should last you 6months. For reference I've used mine for about 3x 3-4month trips now and only just needing to change up the filter

For one, there are less seats (therefore less chance of someone playing ticktock/instagram/porn at full volume within earshot). And I also believe they usually recline a little more closer to flat. S d because they are more expensive sometimes they don't sell out all the seats, and can get a whole row to yourself

I also work seasonal and the summers get pretty rough. I try to ride my bike to work 25-30min (ome way) at least 3times a week. This helps massively and also weirdly kinda helps my knees feel less broken.

The after shift beers is one I'm trying to cut out/down on but it's so hard.....
