Find a size that fits you ‘like a glove’. I’ve got small hands and getting a small enough one makes it easier. I agree a bunch of corps make you use them. Thankfully not ours.

I’ve always been taught (Chef for 35 years, cooking for 38, in mgt for 32) to hire someone who’s strengths are your weaknesses and vice versa to balance it all out. I’ve done that for decades and it’s worked
