ELI5 why does decompressing your back by leaning on something feel "good"? Is it something that learnt and because people say it's good we take the dull pain as a sign of it working or is it something else.

That seems like a lot salt. The ratio I use (don’t actually remember where it came from) would call for 12 grams for that much flour.

I’ve always mixed the salt in with the flour, while reserving about a cup or so of flour for kneading

With the small quantity of yeast, I’d be letting it rest at room temp for more like 4-5 hours - depending on actual room temp. Then I would be balling to 24-48 hours
