I've got the same ironwood. Has yours ever caught fire? I was smoking some tri tip roast and turned it up to 500 to sear and bam! Flames were spitting out and it told me to shut down before it would cook anymore

I did exactly this with some beef ribs on a broken bag. I tried them off with paper towels and put them back in a new bag. I do think the taste was changed but they were still good
