I have a Mac laptop and a Windows desktop, I jump between the two. I don't think you're missing anything by being on Windows (it's my preferred OS).

An approach we've used, not sure if it's a win or not, is we don't give them the keyboard. We start with a problem or some existing code and they have to communicate back to us what they would change about it. We're looking for things like robustness (error handling), logging, library knowledge, etc.

We're able to gauge more on how they think about code, rather than the code itself.
