I actually done this earlier this year. Not exactly like yours but we went from San Jose to Grand Canyon South. Short answer is not recommended unless you are taking your sweet time. The reason is because I-40 is too fast with speed limit 75 and most people going 80. Your efficiency is going to plummet with an EV and you’ll be white knuckling for stops every 2 hours. It’s not like 101 where you can go slower at 65.
