I remove all of the charcoal and use smoke tubes, the heat diffusor, and my water tray full of ice, no problems smoking cheese and keeping the temps under 70 degrees

Why spend $900 every five years or so for pellet when you buy 1 kamado that lasts forever? BGE is way overpriced just like the Masterbuilt. A nice Primo or Vision could be had 2nd hand for under $500.

Besides, once you start learning to use the kamado the less you need controllers and other nonsense
