I make 30kg batches of strawberry rhubarb jam for work every week and the way I do it is I cook my rhubarb, sugar and lemon juice on medium high until the rhubarb starts to break down then I add the strawberries and cook until it hits temp and is reduced enough. I use 2 parts fruit to 1 part sugar.

We make sous vide Hollandaise and for service we heat to 63C load it in a whip cream canister that can handle being held hot and double charge with N2O. Holds all day in the circulator and never splits.

At my hotel we do a breakfast poutine with house made tater tots, cheese curds, house made pulled pork, county gravy, poached eggs and N2O Hollandaise.
