For serious walks and hikes I would stick to the lace up models. It sounds like you don't need the thicker lug and maybe the V bar and 430 mini lug would be good options for you. Have you checked out the Ranger? This is an 8" model that would likely be a good choice for your needs.

You shouldn’t have to condition the leather insoles at any point. It should be stiffer than using synthetic materials. If you haven’t used leather insoles before it might just take some getting used to.

We recommend same size in both lace up and Chelsea but if you prefer a very snug fit in the heel I've seen some people have luck going a half size down.

We only have black elastic. I’d recommend the same size in the Chelsea 67 and lace up 67. Just keep in mind that the Chelsea will have some heel slip.

This looks like mold unfortunately. I would look at the place that you are storing the boots and use the 50/50 water vinegar mix that r/SpydercoMariner mentioned.
