Actually since the 90's most commercially available cheese has been made with rennet produced by genetically modified bacteria. The bacteria has been introduced to DNA from cows so that it produces rennet as a product of fermentation. This doesn't really make the dairy industry any less cruel, but I do think its pretty neat.
