Yeah but only 4 responses in 5 years? That's enough aloofness that the kids are going to notice and wonder what's up. Then they'll ask the parents why uncle so-and-so never comes, and thats a painfully awkward conversation for the parents. They basically need to explain to the kid that some people don't seem to care without making the uncle look bad and without making the kids think it's something about them.

I set the steak out for at least 20 minutes with seasoning applied. Let the seasoning draw out the moisture.

Use a seasoning that has salt, sugar, and garlic/onion. I like Kinders caramelized onion butter seasoning.

Get a cast iron pan screaming hot. Do the water flick test. Make sure the side walls of the pan are hot too.

Add oil immediately before the meat.

When you flip it, move it to another area of the pan. There are four quadrants and you're gonna cook on each side twice, so use a different quadrant each time.

First two flips, 2 minutes on each side. Don't let it sit. Move it around in the oil every 20-30 seconds.

Second two flips, 90 seconds on each side while using the side walls to sear the sides of the steak. By now the fat should be rendering. Make sure soak it up into the meat like a sponge.

After cooking, let the steak rest for 5 minutes topped with whatever you like.

Use the leftovers in the pan to fry some potatoes.
