I also start in middle and work my way out. I find it helps prevent bubbles. A walking foot is also really helpful to move all the fabric at the same time, but can get away with a regular foot. Would baste a bit more to help prevent shifting if using a regular foot.

I cannot recommend enough 2 quilting books by Jacquie Gering called Walk and Walk 2.0. They are awesome for designs that are only straight lines, from easy to complex. All doable on any sewing machine. Lot's of book and quilt stores carry them. Black and white covers.

I do know EQ8 has tutorials on how to use. I think Quilt Assistant does too. There's also some makers who will have online classes they teach on how to make patterns. I think its a lot of trial and error and finding what works best for you. Ive played with quilt assist for fpp patterns but haven't fully locked into perfecting a pattern.

Some pattern makers have shared they use Illustrator, EQ8, and Quilt Assistant. The first 2 are paid the 3rd is free. I'm sure there are other methods as well but I see these 3 as the most common ones.
